Peach Mint Fizz

While the weather has cooled down substantially since the Dante's Inferno style heat wave we had last week, its still summer out there, which merits a refreshing drink to cool you off. This Peach Mint Fizz does just that- and comes together in a flash. And with supermarkets stocked to the brim with fresh peaches, its easy and seasonal to make.


Get a sieve and press 3 or 4 chopped up peaches through, along with a small handful of fresh mint. To get all the good pulp through, pour over a splash or two of gin (I use Tanqueray), and smash everything through with a spoon. Add four tablespoons of agave nectar to the mix, and stir in your desired amount of alcohol. This mix will keep well in the fridge until you're ready to use it. When you're ready to serve, fill a glass with ice and then fill it half way up with the peach mint mix. Then top up to the brim with your favorite sparkling water or seltzer and enjoy!
